Chilaquiles Breakfast Casserole

This Chilaquiles Breakfast Casserole is great if you want to make this dish ahead of time for a big group or just want to try something new.

This casserole is great whether you’re having lunch or just want to make breakfast ahead of time for the week.

Ingredients:

For the Casserole:

  • 10 corn tortillas (cut into 1-inch strips or wedges)
  • 2 cups red enchilada sauce (or green, depending on preference)
  • 1 cup cooked chicken (shredded) or ground beef (optional)
  • 1 medium onion, diced
  • 1-2 fresh jalapeños, diced (optional for heat)
  • 1 ½ cups shredded cheddar cheese
  • 1 ½ cups shredded Oaxaca cheese (or mozzarella)
  • 4 large eggs
  • 1 cup sour cream or Mexican crema
  • 1/2 cup milk (or half-and-half for a richer texture)
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • ½ tsp garlic powder
  • Salt and pepper to taste

1: Get the tortillas ready:

Warm the oven up to 190°C (375°F).

Separate the corn tortillas into pieces or strips that are 1 inch wide. You can quickly fry them in a little oil until they are crunchy and crispy if you want them that way. You can skip the cooking and put them right in the casserole for a lighter version, though.

2. Get the filling ready by:

Put the diced onion and jalapeños (if using) in a big skillet over medium-low heat. Cook for three to four minutes, until the onion is soft. Add cooked chicken or ground beef and stir it into the pan. Cook for 5 more minutes. Add cumin, chili powder, garlic powder, salt, and pepper to the mix to taste. Put away.

3. Put the casserole together.

Grease a 9×13-inch baking dish just a little. On the bottom of the dish, spread out a layer of tortilla strips. Cover the tortilla with half of the red enchilada sauce.

Add half of the cooked chicken (or beef), half of the onions that have been sautéed, and a mix of cheddar and Oaxaca cheese Place another layer of tortilla strips on top. Add more chicken (or beef), the rest of the enchilada sauce, and more cheese.

4. Get the egg mix ready:

Mix the eggs, milk (or half-and-half), and sour cream (or Mexican crema) in a bowl with a whisk. Add some salt and pepper to taste. Make sure to cover all of the tortillas and cheese with the egg mixture as you pour it over the dish.

5. Baking:

Bake the dish for 25 minutes with the foil on top. Take off the paper after 25 minutes and bake for another 15 minutes, or until the casserole is fully set and the top is golden brown.

6. Serve and decorate with:

The dish should be taken out of the oven and left to cool for five minutes before it is served.
Adding fresh chopped cilantro, avocado pieces, radishes, sour cream, and lime wedges on top makes it look wonderful. You can put extra salsa on the side if you want.

Can I make this dish without meat?
